Tuesdays with Dorie: Baking with Dorie - Custardy Apple and Kale Cake


      The 72nd recipe I made with the Tuesdays with Dorie: Baking with Dorie group is Custardy Apple and Kale Cake and can be found in the Baking with Dorie cookbook on page 334. 

        Ingredients: flour, baking powder, salt, black pepper, olive oil, onion, kale, eggs, milk, apples, and cheese.
       This is not what you would think of when you hear the word “cake,” but it looks like what you think of when you hear the word “cake,” so I was eager to make this and see what it was all about…turns out it was all about being savory and delicious. 
       I’m not sure I’ve had a “savory cake” before, definitely not one that tasted like this as it kind of reminded me of a quiche with a different texture and no traditional quiche crust, maybe like a crustless quiche actually.  The combination of ingredients reminded me of an apple/kale/cheese/onion salad that one often sees on a menu when eating out and we both enjoy that salad, definitely a plus for flavor combination. I had the advantage of several bakers in the group choosing to make this two weeks ago so I learned from them to maybe decrease the kale measurement (I went with half the amount of kale specified and that worked out great). Since I did not have an 8” springform pan, I was happy that an 8” cake pan with parchment in the bottom, buttered, and floured worked very nicely and came out of the pan easily. It’s wonderful when the group shares tips with each other and my books are filled with little handwritten notes I’ve made over the years noting everyone’s suggestions, etc. with the name of the person beside each note. This is a treasure for me, all the recipes, all the years, all the groups, all the notes…some of us have been baking together since 2008 so it’s fun to see a note from back then.
       Is this a repeat-worthy recipe? Absolutely. It would be a very fun and delicious addition for family and guests alike, definitely making this again.

  1. I seriously considered making this one, but I just have not had time. I’m glad it was good and I will take your recommendation even though I don’t like kale the rest of it looks delicious.

    1. The kale taste is minimum as I only used half of the amount. Spinach would also be good. So would chard. I'm trying to make you a believer. It was interesting and fun. Sort of like a quiche in disguise.

    1. I think the apple made it a bit wet after freezing but I just stuck it in the oven and it turned out just great. We ate it for a couple of breakfasts nice and toasty.

    1. Thank you...the plates were Mark's grandmother's and it is fun to use them knowing his grandmother and mom and then he grew up eating off them...now us!

  6. So good looking-- I like how you food styled the kale on top! My books are full of scribbles, too. I never seem to have time to do a recipe rebake, but I like knowing the notes are waiting for me if I do.

    1. I didn't style anything on top, that's just how it turned out after I poured the batter into the pan and baked it and somehow it just ended up like that. It's just fun to see the book notes knowing I cooked/baked with this or that person and the memories made. :-)

  7. I like it when members give us hints too. Sometimes I will bake late it I think I need help. This was a surprise hit with us too.
